Like Aonori seaweed, Tenkasu is another seasoning that should be in most Japanese food cupboards. It is a versatile topping that is added to mostly soup-based dishes such as soba, udon and miso soup, but is also great for added oomph to okonomiyaki, yakisoba and yakiudon. These little puffs of wheat are a real bonus in any noodle-type dish.
