Exhibiting their desire to produce a sake that can elegantly evolve over time, Kuheiji oversees the cultivation and preparation of their own premium-grade Yamadanishiki rice, grown in Hyogo Prefecture's famous rice fields and polished to 40% to access the rich, fruity and floral aromas subtly contained in each rice grain. Given years to steadily age at a cool 5°C before bottling, the nose of this vintage junmai daiginjo opens with lively, juicy notes of pear and strawberry, accompanied by white florals and a hint of pepper that wonderfully draw out each refreshing sip.
