Tororo kombu is prepared by softening sheets of kombu kelp seaweed in a vinegar marinade then finely shaving them. The sour-salty umami flavour of this Japanese delicacy makes it perfect for adding to soup, Udon or wrapping onigiri rice balls instead of using Nori seaweed sheet.
