Known in Japan as 'renkon', this uniquely shaped, wonderfully crunchy and highly nutritious root vegetable can be found in all sorts of Japanese dishes, such as oden hotpots, stir-fries and miso soup. This resealable pack of sliced and dried lotus root makes using this rare ingredient easy. Simply soak in lukewarm water for 1-2 hours to reconstitute and drain before cooking.
