Determined to capture the character of their snowy, mountain terroir located in Kitakita, Fukushima in this astonishingly fruity and refreshing junmai, Homare Shuzo has created a fresh, unfiltered sake that is both smooth and thrilling. Made with the current, firmer variant of Fukushima's premium Yume No Ka sake rice polished to 70%, being able to cultivate this rice in the cool, sunny climate and mineral-rich soils of Homare's Shuzo's alpine terroir give this full-bodied junmai a sweet and brisk palate, with hints of soothing banana among the ripe notes picked up by its distinctive Utsukushima Yume yeast. Offering a gentle and crisp, dry finish despite its creamy, unfiltered body, this junmai is a delightful palate cleanser, especially when paired with juicy chicken karaage or tender sashimi.
