Made from whole soy beans and wheat grown in Japan, as well as natural salt, the key difference between this and other soy sauces is that this soy sauce is not pasteurised, instead being run through a microfilter. By preparing the sauce this way, a rich yet mellow and aromatic flavour, that lacks the sharp saltiness often experienced in cheaper soy sauces, is achieved.
