Miso is an essential ingredient in Japanese cuisine, made from soy beans fermented with salt and koji mould. Red miso is made with a high percentage of soy beans fermented for a longer period, giving a deep flavour and a colour moving from red to rich dark brown. For this product, the manufacturer also used barley koji which gives a rich and salty dimension to the miso.
