As a junmai (pure) sake, no additional brewer's alcohol has been added, giving this sake a fuller rice flavour with notes of spiced apple and nuts. Made with the traditional and historic Kimoto technique, where natural lactic acid sterilize the sake mix and brewers grind down the rice over time with paddles, experience a taste of sake history.
